# Restaurant Stock Count Sheet Template: Physical Inventory Reconcile করুন

Physical quantity-কে book stock, variance, value, PAR ও corrective action-এর সঙ্গে link করা location-ordered blind-count template।

Restaurant stock count sheet physical walk সহজ এবং reconciliation defensible করবে। Shelf order-এ item, fixed count unit, first count-এ hidden expected quantity, unusable stock আলাদা এবং counter/verifier/cut-off capture করবে।

এই template general stock-count guide-এর চেয়ে narrow search intent—copyable sheet structure। Full procedure, approved costing method ও food-safety control-এর সঙ্গে ব্যবহার করুন। Count quantity establish করে; food safe, usable বা correctly valued নিজে প্রমাণ করে না।

## Copyable restaurant stock count sheet

Alphabetical নয়, counter যে path হাঁটেন সেই order-এ row রাখুন। Location ID receiving area ও store-এ same carton double count ঠেকায়। Item দুই location-এ থাকলে দুই row, এক reconciliation total।

Quantity ও condition আলাদা। Ten pack physically থাকলেও damaged/expired/thawed/quarantined pack usable নয়। Quantity ও incident/waste reference রাখুন।

## Count header ও cut-off

Count চলাকালে stock movement freeze/control করুন। Mid-count delivery, kitchen issue বা unrecorded transfer loss ছাড়াই variance করে। Cut-off-এর পর movement bridge করুন।

Physical count, book export ও costing-এ same cut-off। Original blind sheet ও signed completed version preserve করুন। Expected quantity দেখলে staff সেই number-এর দিকে count করতে পারেন।

## প্রতি row-এ one SKU, one base unit

Exact stock item/base unit define করুন। Five-litre oil ও one-litre bottle আলাদা SKU বা controlled conversion। Kilogram chicken-কে carton book balance-এর সঙ্গে pack conversion ছাড়া compare নয়।

Unit conversion master list-এ লিখুন। Supplier pack বদলালে test করুন। Stable base unit ব্যবহার এবং purchase reconciliation-এর জন্য packaging detail রাখুন।

## Open/partial stock count

Suitable scale, measuring container বা documented fraction method ব্যবহার করুন। সব open bag half ধরবেন না। Tare করুন এবং প্রতি period same method। Sauce/oil/beverage method repeatable হবে ও uncertainty understood হবে।

Raw, prepared, work-in-progress ও finished item record আলাদা হলে count আলাদা। Prepared sauce raw ingredient quantity-এর সমান নয়; validated production/yield method ব্যবহার করুন।

## Reconciliation ও value sheet

Blind sheet-এ expected/value নয়; signed count-এর পরে reconciliation copy-তে দিন। Adjustment-এর আগে unit, cut-off, receiving, transfer, waste, production, staff meal, usage ও access check করুন।

IAS 2 inventory costing/recognition context দেয়। Applicable method accountant ঠিক করবেন; one invoice-এর last price automatically financial value নয়।

## PAR ও reorder extension

Blind count থেকে PAR/reorder বাদ, purchasing view-তে add। Count কী আছে বলে; PAR/incoming কী কিনবেন বলে। Confirmed delivery থাকলে full gap order নয়।

Branch, season, lead time, storage ও product life অনুযায়ী PAR review। High target stockout কমাতে পারে, কিন্তু cash/spoilage বাড়ায়।

## Food-safety ও expiry flag

Damaged pack, contamination, pest, temperature concern, missing label, expired/unidentified product ও unsafe storage flag করুন। Procedure/authority অনুযায়ী move/dispose এবং quantity/reference preserve করুন।

BFSA food-safety law/resource প্রকাশ করে। Current requirement ও validated control ব্যবহার করুন; spreadsheet colour food-safety decision নয়।

## Risk ও value অনুযায়ী frequency

Item value, movement, perishability, variance history ও operational importance দিয়ে frequency। High-value meat, oil, bottled drink বা critical packaging low-value stable supply-এর চেয়ে বেশি cycle count পেতে পারে।

Universal schedule নয়। Group reason লিখুন এবং repeated variance, supplier/menu/season/branch change-এ review করুন। Service বা safe handling disrupt করবেন না।

## Variance investigation ও sign-off

Count error ও process loss আলাদা। Wrong conversion paper variance; unrecorded waste real but explainable। Theft possible cause, first conclusion নয়। Fair HR/legal process ব্যবহার করুন।

Counter/verifier physical quantity sign, manager reconciliation/adjustment sign, authorized finance value approve। One person count, unit change, post ও approve সব করবেন না।

## Count sheet rollout ও quality check

Full inventory-এর আগে একটি dry-store shelf ও একটি chiller section দিয়ে pilot count করুন। Item order, location code, Bangla/English name, base unit, pack conversion এবং partial-count method staff সত্যিই বুঝছেন কি না দেখুন। Pilot-এর error ঠিক করে তারপর branch-wide sheet release করুন; একই item-এর পুরোনো duplicate row remove করুন।

Blank master sheet version control করুন। কে item add, rename, deactivate বা unit change করতে পারবেন তা নির্ধারণ করুন। Count day-এ staff নিজের মতো row লিখলে temporary line হিসেবে mark করবে; master-data owner পরে supplier document ও physical item দেখে valid SKU তৈরি বা duplicate-এর সঙ্গে merge করবেন।

Completed sheet quality review-এ missing row, impossible negative quantity, unit mismatch, unsigned page, overwritten number, duplicate location এবং unexplained unusable stock check করুন। Correction হলে original entry readable রাখুন, correct value, reason, date ও initials যোগ করুন। Digital form-এ edit history preserve করুন।

প্রতি count-এর পরে sheet layout improve করুন। Counter যদি একই shelf বারবার ফিরে যান, walk order বদলান। Partial container বেশি error দিলে weighing tool বা standard container দিন। Frozen item count করতে door দীর্ঘ সময় খোলা লাগলে smaller section, prepared list বা safer procedure ব্যবহার করুন। Count accuracy food safety ও service continuity নষ্ট করে অর্জন করা যাবে না।

Sheet walk-path method অনুসরণ করে: প্রতি row-এ one item, one base counting unit ও one location; আগে blind physical quantity, পরে cost/book stock। Variance = physical quantity − book quantity; inventory value accountant-approved costing method ব্যবহার করবে।

Inventory cost/expense context-এর জন্য IAS 2 এবং Bangladesh food-safety resource-এর জন্য BFSA link করা হয়েছে। Stock-loss tolerance, shelf life, temperature বা count frequency বানানো হয়নি; food-safety limit authority/product/validated procedure এবং frequency risk/value/need থেকে আসবে।

Strong stock sheet shelf path follow, first count-এ expected hide, unit/location fix, unusable আলাদা এবং adjustment-এর আগে variance reconcile করে। Purchasing, food-cost ও control-এ কাজে লাগে।

Template customize করুন। Food-safety decision current BFSA/product requirement এবং valuation accountant-approved policy-এর অধীনে রাখুন।
