Restaurant Chef Interview Questions Bangladesh: Structured Scorecard and Trial

Last verified: 2026-08-31

Restaurant chef interview questions should test the work the role will actually perform: safe preparation, repeatable quality, service under load, stock and waste control, equipment care, team communication and honest escalation. Ask every comparable candidate the same core questions and score evidence before discussing impressions.

A practical trial can add useful evidence, but it must be job-related, safely supervised and handled under lawful pay, time and privacy rules. Tell the candidate what will be assessed.

Scorecard before questions

Set weights before meeting candidates. Critical safety failure should not be averaged away by charisma.

Define what strong, acceptable and weak answers look like for each question.

CompetencyWeight ideaEvidence
Food safetyCritical/pass gateScenario and observed practice
Core cookingRole-specificTechnique and consistency

Food-safety questions

Look for containment, evidence, approved limits, escalation and no guessing. Candidate answers should defer to the premises plan and competent guidance where necessary.

Use BFSA context in the restaurant's actual training and verification; this article does not invent universal limits.

  • A chilled ingredient arrives outside the approved condition. What do you do and record?
  • A team member reports illness before service. How do you escalate?
  • How do you prevent cross-contact for an allergy-related order?
  • What would make you stop using a piece of equipment or batch?
  • How do you verify cleaning rather than assume it happened?

Service and quality questions

Strong answers describe sequence, communication, check points and measurable follow-up rather than blaming front-of-house or junior staff.

  • Tell us about a peak service that fell behind. What did you change?
  • How do you decide when a dish is ready to leave the pass?
  • A guest returns an overcooked item during a rush. What happens next?
  • How do you keep two cooks producing the same portion and finish?
  • Which KOT timing would you review first and why?

Inventory and cost questions

Do not expect an exact percentage without giving data. Assess the candidate's method and honesty about assumptions.

QuestionListen for
How do you plan prep quantity?Forecast, bookings, stock, shelf life and feedback
What causes food-cost variance?Price, portion, waste, mix, recording and theft as one possible factor
How do you receive a short delivery?Count, condition, exception and supplier follow-up
How do you record wastage?Item, quantity, reason, approval and action
How do you introduce a menu item?Test, yield, capacity, equipment and training

Leadership and conduct questions

Look for respectful standards, escalation and records. Avoid questions about protected or private matters unrelated to the job.

  • How do you run a pre-shift kitchen briefing?
  • Describe feedback you gave after a repeated error
  • What do you do when a manager asks you to serve an unsafe item?
  • How do you train someone who learns slowly?
  • How do you document a conflict or incident?

Practical trial design

Use the same task or equivalent difficulty for comparable candidates. Provide safe equipment and active supervision.

Obtain HR/legal guidance on trial pay and duration. Do not use candidate trials as unpaid production labour.

Reference and evidence check

Ask permission, verify identity of the referee and use job-related questions about dates, role, responsibilities and eligibility under policy. Do not request confidential recipes or another employer's protected information.

Record discrepancies and let the candidate explain before deciding.

Interview scoring

Score independently before panel discussion. Write evidence, not personality labels.

1No relevant evidence or unsafe answer
2Partial knowledge; needs close supervision
3Meets role with clear example
4Strong repeatable method and records
5Leads, improves and teaches with evidence

Decision checklist

  • Trial scored consistently
  • References handled lawfully
  • Salary/shift within approved role

  • Decision evidence retained
  • Appointment process follows current rules

How we calculated and verified this

The scorecard is an operator hiring template grounded in the role's real kitchen, food-safety and cost responsibilities. DIFE and BFSA sources establish local employment and restaurant-safety context.

Use lawful, job-related and consistently applied questions. Obtain Bangladesh HR/legal advice for discrimination, privacy, practical trials, working time, pay and appointment terms.

A structured chef interview compares evidence against the job. Use safety as a gate, practical skill as observed evidence and cost or leadership claims as methods to verify.

Follow DIFE-linked current labour requirements and qualified HR/legal advice for the hiring process.
