Restaurant Weekly Cash Flow Forecast Template: Build a 13-week View
A rolling weekly forecast that separates sale date from cash receipt and gives each shortfall an owner before payment becomes urgent.

Last verified: 2026-08-31
A restaurant weekly cash flow forecast begins with bank and till cash available now, then schedules when money will actually arrive and leave. Cash sales, bKash or Nagad, marketplace payouts and catering receivables may have different timing. Supplier payments, payroll, rent, VAT, loan payments and equipment spend also need their real due weeks.
Use a rolling 13-week view: replace the completed week with actuals, add a new final week and update assumptions. The forecast is a management tool, not a substitute for financial statements or tax work.
Core weekly layout
IAS 7 classifies cash flows into operating, investing and financing activities for financial-statement presentation. Use the categories as a thinking aid, while the accountant controls formal reporting.
Do not include sales that will not settle inside the week as cash receipt. Keep them in the receivable or settlement schedule.
| Section | Rows |
|---|---|
| Opening | Bank, till and approved available cash |
| Operating receipts | Cash sales, digital settlement, marketplace, catering/other receivable |
| Operating payments | Food/packaging suppliers, payroll, rent, utilities, delivery, tax and operating expense |
| Investing | Equipment purchase, installation and asset sale |
| Financing | Owner injection, borrowing, principal/interest and distributions |
| Net movement | Receipts minus payments |
| Closing | Opening plus net movement |
| Headroom | Closing less minimum operating buffer |

Start from verified opening cash
Reconcile bank accounts, till float, deposits in transit and payment-provider balances at the forecast start. Exclude restricted or disputed funds from available cash unless the accountant approves their use.
Write the cut-off time. A bank balance captured before a large payment is not the opening position for the next decision meeting.
Forecast receipts by settlement behaviour
Apply probability only through an explicit scenario or weighted assumption. Do not include an unapproved loan or verbal catering promise in the base case.
| Receipt | Driver | Timing evidence |
|---|---|---|
| Cash | Sales mix and deposits | Day-close/deposit log |
| bKash/Nagad | Confirmed sales and provider settlement | Provider report/bank |
| Marketplace | Delivered orders less timing items | Settlement schedule |
| Card/other | Confirmed provider batch | Settlement report |
| Catering | Invoice/milestone and collection probability | Customer commitment |
| Owner/loan | Approved funding | Signed/verified availability |
Schedule payments from obligations
Use supplier invoices and agreed dates, payroll calendar, rent, utilities, tax workpapers, subscriptions, maintenance work orders, loan schedules and approved capital purchases. Separate committed from discretionary items.
Record payment owner, earliest/latest date, consequence of delay and whether partial payment is contractually possible. Do not move legal or employee obligations casually to make the graph look better.
Base, downside and action cases
Keep downside realistic and specific. For example, reduce a promoted category or delay a marketplace settlement rather than applying one arbitrary percentage to every row.
A response is not part of the action case until an owner, approval and execution date exist.
| Case | Assumption | Use |
|---|---|---|
| Base | Most supportable demand and timing | Operating plan |
| Downside | Lower sales, slower settlements, higher critical cost | Liquidity risk |
| Action | Approved response such as spend deferral or owner funding | Decision plan |
Hypothetical teaching example
This example is arithmetic only: 200,000 + 450,000 - 500,000 - 60,000 = 90,000. It is not a market estimate. The shortfall forces an early decision about the equipment payment, receipts, approved funding or another lawful action.
| Week 1 item | BDT |
|---|---|
| Opening available cash | 200,000 |
| Operating receipts | 450,000 |
| Operating payments | 500,000 |
| Equipment payment | 60,000 |
| Owner funding | 0 |
| Closing cash | 90,000 |
| Minimum operating buffer | 120,000 |
| Headroom/(shortfall) | (30,000) |
Connect break-even and cash
Break-even asks whether contribution covers fixed costs; cash forecast asks when receipts and payments occur. A restaurant can be profitable in a period and still lack cash before a marketplace settlement or customer collection.
Use the SBA contribution-margin concept for volume scenarios, but map the resulting sales to actual settlement and payment weeks.

Weekly forecast meeting
- Replace prior forecast with actuals
- Explain receipt/payment variances
- Reconcile opening cash
- Review lowest headroom week
- Confirm critical obligations
- Approve actions and owners
- Add week 13 and lock version
Variance log
Forecast accuracy is not achieved by rewriting history. Preserve the previous version and learn which assumptions repeatedly fail.
| Field | Purpose |
|---|---|
| Forecast | What was expected |
| Actual | What happened |
| Timing/value | When or amount difference |
| Cause | Demand, settlement, supplier, error or decision |
| Recurring? | Update future assumption |
| Owner/action | Who changes the plan |
| Evidence | Report, invoice or bank reference |
Copyable columns
Use row category, counterparty/channel, due or settlement rule, committed/discretionary, Week 1 to Week 13, base/downside/action case, owner, evidence link, last updated and notes.
How we calculated and verified this
The 13-week layout is a management forecast template, not an IFRS financial statement. IAS 7 is cited to distinguish cash-flow categories and cash from profit; SBA supports contribution and break-even concepts used for scenarios.
All example numbers are hypothetical teaching inputs, not Bangladesh restaurant benchmarks. The owner and accountant must replace them with actual bank, settlement, payroll, supplier and tax timing.
A weekly forecast buys decision time. Base it on verified cash and real settlement or due dates, then give each shortfall action a named owner.
Rosuii reports can supply sales, purchase, expense and payroll inputs; the accountant should approve cash definitions, tax and financing treatment.
